Baked Salmon with Potato Bed

Ingredients

  • Potatoes
  • Salmon
  • Salt
  • Pepper
  • Thyme
  • Rosemary
  • Olive oil or Butter
  • Lemon

Procedure

  1. Evenly slice potatoes, put in a bowl, and add olive oil or butter to coat the potatoes
  2. Add thyme, rosemary, salt, and pepper. Mix the potatoes to have it evenly coated with the oil and herbs
  3. Shingles the potatoes and put them 425F oven for 30 minutes
  1. While waiting, evenly slice the lemon.
  2. Coat the salmon in olive oil (this can be skipped if you use butter)
  3. Salt and pepper the salmon
  4. Once the potatoes come out, put the salmon on top of the shingled potatoes
  5. Put small cubes of butter on the salmon (this will melt in the oven and baste the salmon)
  6. Add some sprigs of thyme or rosemary atop of the salmon (or butter if you used butter)
  7. Put the sliced lemon on top of the salmon
  8. Put everything in the oven for 15 min or so
